would these rims fit on our cars with no spacers?

18x8 in the 5x108mm/5x4.25 lug pattern with a +40mm offset.

How would they be?

+40 on 8" wheels will be fine. No spacers needed.

what size tires are recommended on the 18x8" wheels? I assume they are pricey....

A good choice would be 245/45/18. Fits nice on that rim width, matches stock diameter, and quite a few choices available in that size now. It's OE on some newer vehicles.
