Another Temp.question!

why would my gauge gradually creep up[like normal] but not stop until its 3/4 the way up[about to the "m"] and drasticly drop to between the hash mark and the"n".then it remains cool the entire time you drive it?i got 2 new waterpumps,thermostat,bleeder cap,and the rad appears clean.its been flushed very well.i tried to bleed it when its says its hot,no bubbles, antifreeze doesnt seem real hot.oils clean and fresh lookingits like the therm wont open for awhile then all of a sudden it opens and the needle plummits[ive never spelled that before?] to the cool area of the gauge.ive been driving it anyway.thanks for any input!!
