Is it normal for the oil pressure guage to sometime not read very little or none at all then a few mins later be around the "o" in normal?????

The guage isn't a "real" guage Rick, it's designed to read anywhere in the "normal" range when it sees 5-7 PSI, so you most likely have either a sender problem (my bets on that) or a guage /wiring problem. Also, when it fluctuates, tap on the clear dash bezel over it and see if it moves.
If you don't hear any metallic noises to indicate you're losing pressure, first look at the sender, they're about $5 at AutoZone, and the wiring lead to it.
Hooking up a mechanical guage would be cool if you want to see what's really happening. Ford did what they did likely because people that didn't know any better would view the constantly fluctuating needle as a problem, especially when it dropped to low psi at idle, and they wanted to rid themselves of unnecessary service calls I guess, from worried people. That's my guess at least, for them putting in a 'glorified idiot light' of a guage.

I'm with Dan,
Check the oil pressure sending unit out, it will most likely be the culprit. I've been wanting to put some aftermarket gauges in for my vitals such as oil pressure, temp, and voltage as I don't trust these gauges as far as I can throw em! :D
