The sensor on the tstat housing is strictly used for the temp gauge, nothing else. The sensor next to the DIS is for the EEC to use to determine when to turn on the fans etc, timing, fueling etc.
The cars with the electronic climate control also had a temp sensor located close to the throttle body on the steel coolant line on the pax side, which would be a good option to consider if you didn't have the climate control.
