Low coolant and Low oil warning lights

I have both on my 96 mustang and its one of the reasons that
its still alive after 350k is it possible to set something up like this? Expecially the low coolant! On the mustang it appears to just be a two wire sensor on the overflow tank. I can get flashing flush mount leds for cheap! (I've got one on my n20 to let me know its armed)
Anyone set up something like this? Didn't the vmm cars already have it?

Yes, VMM cars had both sensors.

I'm not sure the VMM solution is ideal, though - for low coolant, they trickle a current through the coolant and check the resistance (which, with the tendency of our heater cores to rot out due to electrolysis, doesn't really sound like a good idea to me ... )

The oil sensor is easier - it bolts to the oil pan (would require welding a boss on yours, or at least finding a sensor-equipped oil pan to swap) and just drives a switch. I THINK it's a bit more than that on VMM cars, but haven't dug into the wiring or a VMM schematic yet.
